A fun spin on the classic chicken parm: these are low carb, grain free chicken parm tenders! Both air fryer & kid friendly!

These chicken parm tenders are made similar to my Whole 30 Chicken Tenders with Sugar Free Chick-Fil-A Sauce, but I used different grain-free crackers for a slightly different flavor. The biggest difference (besides the gooey melted mozzarella cheese on top) is that these are made in the air fryer! So no mess or heavy cleaning when making these.

The best part is dipping these delicious tenders into a warm marinara sauce, and I got you covered on that. I have the recipe for my Nonnie’s Homemade Marinara that is perfect dipping sauce for these.

Chicken Parm Tenders

ingredients:

  • 2 chicken breasts

  • 1/2 cup arrowroot powder

  • 2 eggs

  • 1 tsp salt

  • 2 cups of grain free crackers (I used Simple Mills Almond Flour Cracked Black Pepper Crackers)

  • fresh thyme

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 cup mozzarella

  • 1 cup marinara sauce for dipping (here is my Nonnie’s Homemade Marinara)

directions:

  1. add arrowroot powder in one bowl and whisked egg and salt in another bowl.

  2. in a food processor, pulse the crackers, garlic powder, onion powder, and fresh thyme, together until it forms fine breadcrumbs. pour crumbs into a third bowl.

  3. dip your tenders in the arrowroot, then the egg, then the “bread” crumbs.

  4. add the chicken tenders to the air fryer basket. air fry at 400 for 10 minutes, flipping the tenders halfway through.

  5. leave the tenders in the air fryer basket and sprinkle the mozzarella on top. air fry for another 2 minutes.

  6. heat up the marinara to dip the tenders into. enjoy!
