Chicken Tender Salad

The best chicken tender salad you’re ever going to have! It’s loaded with flavor and Whole 30 approved!

Is anyone else just a sucker for chicken tenders? They’re probably one of my top five favorite foods and I’m so freaking happy I don’t have to give them up during Whole 30! I used a combination of almond flour and coconut flour for the breading on these and then loaded the salad up with delicious veggies like carrots, cauliflower, marinated red onions, pickled jalapenos, radishes, and sunflower seeds. I used a dairy-free ceasar dressing on top of this salad and it was BOMB! I got this one!

Here’s what what you need for this Chicken Tender Salad:

  • butter lettuce

  • chicken breast

  • eggs

  • salt + pepper

  • almond flour

  • coconut flour

  • garlic powder

  • paprika

  • avocado oil

  • cauliflower

  • carrot

  • radishes

  • marinated onions - I have a great recipe for these here!

  • pickled jalapenos

  • dairy-free caesar dressing

You’ll bread your chicken tenders and pan fry them in the avocado oil. Season them with some more salt and mix all your ingredients together for this delicious salad bowl!

 

Chicken Tender Salad

(serves 2)

ingredients:

  • 2 cup butter lettuce

  • 1 chicken breast

  • 2 eggs

  • 1 tsp salt

  • 1 tsp pepper

  • 1/2 cup almond flour

  • 1/2 cup coconut flour

  • 1 tsp garlic powder

  • 1 1/2 tsp paprika

  • 1/4 cup avocado oil

  • 1 cup cauliflower florets

  • 1 carrot, shaved into ribbons

  • 2 radishes, sliced thin

  • 2 tbsp pickled jalapenos

  • 2 tbsp marinated red onions

  • 4 tbsp dairy-free caesar dressing

directions:

  1. cute your chicken breast into strips. scramble the two eggs with the paprika, garlic powder, salt and pepper and soak the strips in them while you make your breading.

  2. mix together the almond flour and coconut flour in another shallow bowl. dip each tender into the breading and set to the side.

  3. heat the avocado oil on medium heat and pan fry the chicken tenders until golden brown on both sides (about 5 or so minutes each side).

  4. arrange all other ingredients in your bowl along with the chicken tenders. drizzle on the dairy-free ranch and enjoy!
