Vegan Ooey-Gooey Tomato Basil Grilled Cheese

A grilled cheese and tomato basil soup combo all wrapped up in one melty toasty sammie. And did I mention, it’s vegan?!

This is a great lunch to be able to whip up in just a few minutes because the only cooking you’re doing is frying it up in the pan to get super melty. I use a LOT of basil on mine. I almost use the basil as a substitute for lettuce. The basil and tomato combo don’t even have me missing the tomato soup on the side.

Vegan Ooey-Gooey Tomato Basil Grilled Cheese

ingredients:

  • 2 slices sourdough bread

  • 2 - 3 slices plant-based cheddar cheese (I love to use VioLife Cheddar Slices)

  • 2 tbsp dairy free mayo (Primal Kitchen Avocado Oil Mayo is a great one)

  • 3 large slices heirloom tomato

  • salt + cracked black pepper

  • 1 tbsp olive oil

  • handful of basil leaves

directions:

  1. heat the olive oil on medium in a pan.

  2. spread the mayo on each slice and then layer the cheese, tomatoes, salt, pepper, and basil leaves

  3. crisp both sides of the sanwich in the pan until each side is golden brown. cover the pan and turn to low heat to get the cheese to melt some more.

  4. cut in half and enjoy!
