there’s not much more I love that some chicken tendies, and these baked chicken tenders are both healthy and ohhhh so delicious. and when you add in some healthy-ish chick-fil-a sauce on the side? fuggetaboutit.
if you’re like me and crave chick-fil-a on sundays you need to save this recipe, and especially this sauce! its still sweet like chick-fil-a sauce is, but definitely provides the tangyness you’d want.
these are whole 30 approved since I am using crackers made of almond flour for the breading instead of using breadcrumbs or panko. these are also way less fatty that chicken tenders you order at a restaurant since they are baked instead of pan or deep fried.
Whole 30 Chicken Tenders with Sugar-Free Chick-Fil-A Sauce
ingredients:
2 chicken breasts
1/2 cup arrowroot powder
2 eggs
1 tsp salt
1 bag whole 30 approved crackers (I used Simple Mills Rosemary and Sea Salt Crackers)
1 tbsp flax seeds
1 tsp garlic powder
1 tsp fresh thyme
1 tsp onion powder
1/2 tsp paprika
1/4 cup olive oil
sugar-free chick-fil-a sauce
1 tbsp whole 30 approved ketchup (Primal Kitchen Organic and Unsweetened Ketchup is a great brand)
1 tbsp dijon mustard
1/2 cup avocado oil mayo
2 tbsp sugar free barbeque sauce (Primal Kitchen Original Unsweetened BBQ Sauce)
1 tsp monkfruit sweetener
1/2 tsp smoked paprika
dash of apple cider vinegar
directions:
preheat oven to 425.
cut your chicken breast into strips.
add arrowroot powder in one bowl and whisked egg and salt in another bowl.
in a food processor, pulse the whole 30 approved crackers, flax seeds, garlic powder, fresh thyme, onion powder, and paprika together until it forms fine breadcrumbs. pour crumbs into a third bowl.
dip your tenders in the arrowroot, then the egg, then the “bread” crumbs.
place them on a lined baking sheet and drizzle some olive oil over top.
bake for 16 minutes, flipping halfway through.
to make the chick-fil-a sauce, whisk all the listed ingredients together. dip and enjoy!
