Sunshine Breakfast Bowl

A nutritious, brightly colored bowl filled with spinach, bell peppers, zucchini, eggs, and marinated onions.
To be honest, I rarely eat breakfast now a days. I know what you’re thinking, breakfast is the most important meal of the day, blah blah blah, but usually it just doesn’t work with my schedule! So when I do actually have a day where I’m able to make breakfast, I want to make it count! I love making a beautiful breakfast to get my morning going when I have the time to. It gives me a kick start to my whole day to make a conscious decision to eat something filled with vitamins and nutrients. This bowl is totally customizable based on what is in your fridge, but this is one of my favorite breakfast to make.
Here’s what I use to make my Sunshine Breakfast Bowl:
flat leaf spinach
bell peppers
zucchini
eggs
marinated onions - I have a great recipe for these here!
olive oil
garlic powder
salt + pepper
everything but the bagel seasoning
I love using a leafy green as my base for these bowls. In this case, I used flat leaf spinach, but kale, arugula, or any other of your favorite greens work. I then add scrambled eggs seasoned with salt, pepper, and everything but the bagel seasoning. Next I’ll add two different sauted veggies. I used mini bell peppers and zucchini in this Sunshine Breakfast Bowl. I also have used brussel sprouts, yellow squash, sweet onion, tomatoes.. pretty much whatever is in season or I have in my fridge!
