Happy Whole 30 January! Let’s start off the year with our favorite snacks, chips!

One of the hardest parts in my opinion doing Whole 30 is finding approved snacks that actually satisfy me. When I did my first round of Whole 30 I was eating a hard-boiled egg every time I was starving, which got old very quickly. These sour cream & onion chips are just the satisfying treat I need sometimes when I just need to hound down on some yummy chips, but still stay healthy. One of my favorite flavors is sour cream and onion, which is perfect because it doesn’t require many ingredients and its so easy to make them Whole 30 compliant.

Here’s what you’ll need to make these Whole 30 Sour Cream & Onion Chips:

  • russet potatoes

  • garlic powder

  • onion powder

  • parsley

  • salt & pepper

  • olive oil

  • coconut oil

The trick to getting these chips nice and crispy is giving them an ice bath. Once they soak, you want to pat them dry and season them to get that delicious sour cream and onion flavor. After frying them in the coconut oil and olive oil, you lay them on paper towels to soak up the excess oil and season with a little more salt and pepper.

 

Sour Cream & Onion Chips

ingredients:

  • 2 russet potatoes, peeled

  • 1/4 cup + 2 tbsp olive oil

  • 1/4 cup coconut oil

  • 2 tbsp onion powder

  • 2 tbsp garlic powder

  • 1 tbsp dried parsley flakes

  • 1 tsp salt

  • 1 tsp pepper

directions:

  1. using a mandolin, slice the potatoes into thin rounds.

  2. fill up a large bowl with water and ice cubes and submerge the potatoes. let them soak for at least 20 minutes.

  3. drain the potatoes and pat them dry with a paper towel. toss them with 2 tbsp olive oil, onion powder, garlic powder, dried parsley flakes, salt and pepper.

  4. in a frying pan, add the olive oil and coconut oil and heat on medium. start frying the potatoes in batches. fry about 4-ish minutes on each side until they start to look golden brown.

  5. lay a paper towel down and layer the chips on top once fried. this will soak up a lot of the excess oil. optional: season with more salt and pepper.
