want to know one of my favorite breakfast items of all time? two words: mcdonalds. hashbrowns.

it was only fitting I eventually try and recreate them, but make them just a taddddd healthier. these came out really great and totally satisfied my craving (and my hungover cravings for these things are wild.) they are only a few ingredients and were way easier to make than I expected.

these are whole 30 approved, because I’m using arrowroot power instead of flour. they are also dairy free, grain free, and vegetarian.

Healthy McDonald’s Hashbrowns

ingredients:

  • 1 russet potato shredded

  • 2 cups cold water

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tbsp arrowroot powder

  • 1/4 cup of olive oil

directions:

  1. heat oil in a fry pan on medium heat.

  2. peel and shred your potato and place in a bowl with the cold water. let stand a few minutes.

  3. drain the shredded potatoes and place in a paper towel or cheese cloth. wrap them up and squeeze the water out of them.

  4. place the potatoes in a bowl with the salt, pepper, garlic powder, onion powder, and arrowroot powder. fix with a fork.

  5. form patty shapes with your hands and place them in the frying pan. cook for 5 minutes on both sides until each side is browned and crispy.
