Healthier Banana Reese’s Cups

My peanut butter obsession continues with these Homemade Banana Reese’s Cups!
I have been on a massive peanut butter kick recently. I made my Homemade Nut Butter, Homemade Nutter Butters, and now my Homemade Banana Reese’s Cups! You can definitely eliminate the banana in the middle, or add in a different slice of fruit if you wanted. Another good option would be a strawberry or blueberries in the middle. These are so easy to make for a weeknight snack or dessert.
Healthier Banana Reese’s Cups
(makes 12 Reese’s cups)
ingredients:
1 cup dark chocolate chunks or chips
1 tbsp coconut oil
1/2 cup natural, runny peanut butter
1 banana, sliced
flaky sea salt
directions:
In a microwave-safe bowl, heat the chocolate and coconut oil together in 10 second intervals, mixing each time until totally melted.
Add cupcake liners to a muffin tin and add the bottom layer of chocolate to each. Keep some chocolate left for the tops of the cups.
Next add a slice of banana to each cup. Then add a spoonful of peanut butter overtop to fully cover the banana.
Use the rest of the melted chocolate for the tops of the cups. Sprinkle with a pinch of sea salt over top each peanut butter cup.
Place muffin tin in the freezer for at least an hour. I keep mine stored in the freezer and grab as I want one!
