My peanut butter obsession continues with these gluten free, refined sugar free Nutter Butters!

My childhood dreams are coming true with these gluten free, refined sugar free Nutter Butters that are completely homemade, moist, and totally delicious. These are such a cute dessert/ snack to make for a quick sweet treat for the week.

For people who have never had a Nutter Butter, they are peanut butter flavored cookies, shaped like a peanut, with peanut butter sandwiched between two cookies. Aka, these are a peanut butter-lovers DREAM! It’s definitely peanut butter overload, and since I’m obsessed with peanut utter, it’s one of my favorite desserts ever.

Here what you need for these Homemade Nutter Butters:

  • almond flour

  • oat flour

  • natural, runny peanut butter

  • maple syrup

  • salt

  • vanilla

You can make 6 large Nutter Butter with this recipe, 12 minis, or you don’t have to make them in a peanut shape. You can make them into 12-24 regular shaped cookies and stack them on top of each other with peanut butter in the center. It’s up to you!

 

Homemade Nutter Butters

(makes 6 large Nutter Butters or 12 mini Nutter Butters)

ingredients:

  • 3/4 cup almond flour

  • 1/2 cup oat flour (blend rolled oats to make if you don’t have any)

  • 1 cup peanut butter + 1/2 cup for filling

  • 1/2 cup maple syrup

  • pinch sea salt

  • 1 tsp vanilla

directions:

  1. Preheat oven to 350 F.

  2. Sift together your almond flour and oat flour in a large mixing bowl.

  3. Add in the 1 cup of peanut butter, maple syrup, sea salt and vanilla. Mix until well combined.

  4. Make 1 inch balls of dough and roll them out with your hands. Combine two pushed together to make your peanut shape. This will make 12 large cookies (6 nutter butters). You can also cut the size in half and make 24 small cookies (12 bit-size nutter butters).

  5. Use a fork to make a crosshatch pattern on the tops of the cookies. This will also help flatten them and get the two balls of dough to stick together better.

  6. Bake for 10-11 minutes and let cool.

  7. Spread peanut butter on the underside of the cookies and stack two on top each other. Serve and enjoy!
