Smoked Salmon Dip with Fried Capers

Now this is what I call everything but the bagel. A creamy dip with smoked salmon, crispy fried capers, pickled red onions, a squeeze of lemon and fresh dill.

The other weekend the weather was perfect and football was on, so we just had to break out the smoker for the first time this season. We usually make smoked pulled pork, but my friend was in town who is a pescatarian. We figured why not finally try smoking a fish, so smoked salmon seemed like the way to go. It was AMAZING. I loved it so much more than the thin slices of smoked salmon you get at the store. We were eating it by the forkful it was that good.

We made so much smoked salmon we thought an awesome way to utilize it would be to make this smoked salmon dip with fried capers. It takes all our favorite bagel & lox toppings and makes a super creamy, smoky dip to use on these homemade toasted crackers we made from some old sourdough rolls I had.
