Air fryer salmon with a bright, citrusy salsa and zesty feta for a quick and easy dinner.
Air fryer salmon has been my go-to quick and easy dinner recipe for a while now. But because I eat it so often, I am constantly trying new ways to vamp it up. This orange feta salsa went perfectly with the crispy, juicy salmon. It was so bright & fresh! The sweet oranges complimented the tiny cherry tomatoes I used and the feta gave it that savoryness it needed to balance out.
I also added cilantro and dill for some herbiness and squeezed some lemon over it all to tie it together. I could see eating this salsa with tortilla chip it was so good!! I’ve tried putting mango and pineapple in my salsa’s before, but never messed with oranges. I wish I had done this sooner because it gave me a wintery salsa vibe which I loved instead of the summer vibes with mango and pineapple.

Making the air fryer salmon is easy. It goes into the air fryer for 9-11 minutes and in the meantime, you can make the salsa. I chop up the oranges and split the tiny cherry tomatoes in half. If you are using regular sized cherry tomatoes, split them into quarters. Then combine them with feta, chopped cilantro and dill, a big squeeze of lemon, and some salt and cracker black pepper. I plate the salmon and then add the salsa right on top. I also like to make extra salsa to serve on the side to let people dish it out as they serve themselves.
