Air Fryer Loaded Potato Wedges

gluten free / vegan

Homemade russet potato wedges air fried to perfection, topped with silky cheddar queso, pickled onions and jalapenos, avocado and a lime crema.

These are the ultimate game time snack that the whole family can enjoy, and you can whip up in 30 minutes! It is minimal cleanup because you are using the air fryer to make the fries and you just need a tiny sauce pan to make the rest of the toppings.

Air Fryer Loaded Potato Wedges

ingredients:

  • 3-4 large russet potatoes, cut into wedges and soaked in water for 20 minutes at least

  • 2 tbsp olive oil

  • salt & pepper

  • 1 tbsp garlic powder

  • cheddar queso

    • 1 tbsp butter

    • 1 tbsp flour

    • 1 cup milk (can use plant based)

    • 1 cup cheddar cheese, shredded (can use plant based)

  • 1 red onion, sliced thin

  • 4 jalapenos

  • 1 avocado

  • 2 cups white distilled vinegar

  • 1 cup water

  • pinch of salt

  • 1 tsp sugar or honey

  • 1 tbsp whole black peppercorns

  • 1/2 cup sour cream (can use plant based)

  • juice of 1 lime

directions:

  1. to make your pickled veggies, add in the vinegar, water, salt and sugar to a sauce pan and let it simmer. place your veggies and peppercorns into a glass jar and pour the hot pickling liquid over the veggies. let them sit in the fridge until you’re ready for them. the longer they sit, the more pickled they get and better they turn out.

  2. while the veggies are pickling, take out the wedges from the water and pat dry. toss in olive oil and season with salt, pepper and garlic powder.

  3. air fry wedges at 400 for 22-24 minutes, shaking the basket halfway. depending on how many fries you make you might need to make two batches in order to not crowd the fries.

  4. in a small saucepan, add the butter and let it melt. add in the flour and whisk it for a few minutes. then add in the milk slowly while whisking. let it cook until it thickens slightly and then add in the shredded cheese. stir and let it thicken again.

  5. assemble your loaded fries with fries on the bottom, then the cheddar queso, then your avocado and pickled onions and jalepenos.

  6. to make the crema, simply mix the lime juice with the sour cream and drizzle on top.
