Carbonara Breakfast Pizza
If you didn’t think pasta or pizza for breakfast was a thing, think again my friend.
This carbonara breakfast pizza uses 2 ingredient dough (soooo easy to make), and uses a carbonara sauce as the base for this delicious brunch idea. It’s topped with parmesan, mozzarella, prosciutto and don’t forget the runny egg!
Carbonara Breakfast Pizza
(makes 2 mini pizzas)
ingredients:
2 ingredient dough
3/4 cup self rising flour + more to knead
3/4 cup plain nonfat greek yogurt
olive oil for brushing
sea salt for sprinkling
4 large eggs
1/4 cup grated parmesan
salt + cracked black pepper
1/2 cup shredded mozzarella
4 slices prosciutto

fresh parsley
cracked black pepper
directions:
preheat oven to 400.
make the 2 ingredient dough by mixing self rising flour with nonfat green yogurt with a spatula in a bowl until dough forms. start kneading the dough in the bowl. cut the dough into 2 pieces and roll out each one to make 2 mini pizzas.
roll the outer edge of your pizza dough over to form a crust. brush olive oil on the dough and over the crust and sprinkle with sea salt.
in a bowl, whisk 2 eggs with 1/4 cup of grated parmesan, salt, and cracked black pepper. pour mixture over each pizza making sure it doesn’t overflow over the crust.
sprinkle some shredded mozzarella over the top of pizzas and spread some prosciutto out.
bake on pizza tray for 15 minutes. take the pizzas out and form a hole in the middle of the pizzas. crack the egg in the hole you formed making sure the yolk doesn’t break.
bake for another 5-8 minutes until the white around the yolk forms, but the yolk should still be runny.
remove and sprinkle more parmesan, parsley and cracked black pepper on top.
