Salmon California Roll Sushi Bowl

Lately I’ve been craving one thing and one thing only - sushi bowls. This is my favorite one yet! It’s so simple and made with salmon, edamame, Persian cucumbers, avocado and brown rice.

I love making this Salmon Sushi Bowl because of how quickly I can make it. I use the air fryer to make the little salmon bites and then basically take my favorite parts of a California roll. I get frozen shelled edamame so it only takes a couple minutes to heat up. I also love to use the bags of frozen organic rice from Trader Joes. I throw a bag in the microwave and it’s ready to go in 3 minutes.

Here’s what you’ll need for this Salmon California Roll Bowl:

  • salmon

  • soy sauce

  • ginger

  • garlic

  • brown rice

  • edamame

  • Persian cucumber

  • avocado

  • sesame seeds

  • rice vinegar

  • kewpie mayo

  • sriracha

  • sea salt

This is a great bowl to have for meal prepping. It’s so easy to make these ingredients ahead of time and just assemble together for a quick and delicious meal. Salmon California Sushi Roll Bowl

Turning a Salmon California Roll into a delicious and nourishing sushi roll bowl packed with pickled ginger veggies, edamame, avocado, and a delicious spicy mayo sauce over the whole thing!

Ingredients

  • 8 oz salmon, cubed
  • 1 tsp ginger
  • 1 garlic clove, minced
  • 2 tbsp soy sauce
  • 1 tsp sriracha
  • 1/2 tsp honey
  • Pickled Ginger Veggies, see below
  • 1 1/2 cups rice, cooked
  • 1 avocado, cubed
  • 1/2 cup cooked edamame
  • Green onion, chopped
  • Sesame seeds
  • Spicy Mayo Sauce, see below
Pickled Ginger Veggies
  • 1 large carrot, cut into ribbons
  • 1 cup cucumber, diced
  • 2 tsp ginger
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
Spicy Mayo Sauce
  • 2 tbsp kewpie mayo
  • 1 tbsp sriracha
  • 1 tbsp rice vinegar
  • 1/2 tsp honey

Instructions

  1. Make the air fryer salmon bites by removing the skin from the salmon cut into cubes. Toss them in the soy sauce, ginger, garlic, sriracha and honey. Cook in the air fryer at 390 for 9-10 minutes.
  2. Make the quick pickled veggies by combining the carrots, cucumbers, rice vinegar, ginger, and sesame oil. Let sit until the salmon is done cooking and you are ready to assemble the bowls.
  3. Make the spicy mayo sauce by whisking the listed ingredients together until sauce forms.
  4. Assemble the bowls with the cooked rice, air fryer salmon bites, pickled cucumbers and carrots, edamame, avocado, sesame seeds, green onions, and a big drizzle of that spicy mayo sauce. Can also top with more soy sauce if desired!
