Salmon & Creamy Brussel Sprout Orzo

A simple, light, flavorful one-pan meal with seared salmon over creamy orzo filled with brussel sprouts, leeks, garlic, thyme, rosemary, and parmesan!

I love a good one-pan meal for a quick and easy weeknight meal. I wanted to make a sort of risotto, except I didn’t want to spend an hour in the kitchen making it. Orzo cooks way faster than Arborio rice does like in a traditional risotto. I also wanted to make it a little healthier and not use any heavy cream. What makes it so creamy is cooking is low and slow. You slowly add in the broth and mix it so it gets creamy. I also added a parmesan rind which gives it so much flavor and definitely adds to the creaminess.

  • Vegetables - Brussel Sprouts, Leeks, Garlic

  • Seasonings - Salt, Pepper, Paprika, Garlic Powder

  • Pantry - Orzo, Olive Oil, Chicken or Vegetable Broth

Salmon & Creamy Brussel Sprout Orzo

A simple, light and flavorful one-pan dish with salmon over a creamy orzo filled with brussel sprouts, leeks, garlic, thyme, rosemary, and parmesan.

Ingredients

Salmon
  • 12 oz salmon
  • 2 tbsp + 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme (fresh or dried)
  • 1 tsp paprika
  • 1 tsp garlic powder
Brussel Sprout Orzo
  • 2 garlic cloves, minced
  • 1 cup leeks, the whites sliced
  • 1 1/2 cups brussel sprouts, shredded
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp rosemary, chopped fine
  • 1 tsp thyme (fresh or dried)
  • 1 cup orzo
  • 3 cups broth (vegetable or chicken)
  • 1 parmesan rind (optional)
  • 1/2 cup parmesan, grated

Instructions

  1. Season the salmon with 2 tbsp of olive oil and all the seasonings listed.
  2. Add the other 2 tbsp of olive oil to a pan on medium high heat. Sear the salmon, skin side up and cook for 4 minutes. Flip the salmon and cook for another 3 minutes. It's okay if the salmon is still pink in the middle, it will continue cooking in the orzo.
  3. Remove the salmon and set aside.
  4. Lower the heat and add in the garlic to the pan. Scrape the bits off the bottom of the pan as much as you can.
  5. Add in the leeks and cook for a few minutes until they start to soften.
  6. Add in the brussel sprouts, salt, pepper, rosemary and thyme. Cook until all the vegetables soften.
  7. Stir in the orzo and then 1 cup of the broth. Add in the parmesan rind is using. Let the mixture simmer while you stir occasionally.
  8. Once the orzo soaks up all the liquid all in another 1 cup of broth. Once it soaks it all up, pour in the rest of the broth, stir, and place the salmon in the pan in the middle of the orzo mixture, skin side down.
  9. Let the orzo cook down until the liquid is fully gone and the salmon is cooked through. Remove the rind and sprinkle the parmesan on top, mix, and serve!
