Gluten Free Veggie Crust Pan Pizza

Pan pizza made with a gluten free crust featuring zucchini, sweet potatoes, and almond flour.

I’m just over here trying to think of ways to eat pizza every day and not have to feel any guilt about it, don’t mind me! This pizza really does do the trick though. It’s loaded with veggies and is super low carb. I love being able to make this in under 20 minutes and I end up with an easy cleanup and deliciously crispy pizza.

Here’s what you’ll need for this Gluten Free Veggie Crust Pan Pizza:

  • sweet potato

  • zucchini

  • almond flour

  • egg

  • salt

  • pepper

  • garlic powder

  • oregano

  • avocado oil

  • marinara - I use my Nonnie’s Marinara Recipe

  • shredded mozzarella

  • spinach

  • pepperoni

  • red pepper flakes

After shredding the sweet potato and zucchini, you will combine it with the almond flour, egg, and spices. Heat the avocado oil in your pan and pour the batter into it. Let it crisp on the bottom, and then carefully flip it to get the other side crispy. Top it with the marinara, spinach, shredded cheese, and pepperoni. Cover the pan so the cheese can get melty. Serve it with some red pepper flakes or whatever other topping your heart desires!

 

Gluten Free Veggie Crust Pan Pizza

(makes an 8” size pizza)

ingredients:

  • 1/2 sweet potato, peeled

  • 1/2 zucchini

  • 1/2 cup almond flour

  • 1 egg

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1 tsp oregano

  • 2 tbsp avocado oil

  • 1/2 cup marinara - I use my Nonnie’s Marinara Recipe

  • 1/2 cup shredded mozzarella

  • 1 cup spinach

  • 12 slices pepperoni

  • pinch red pepper flakes

directions:

  1. shred the zucchini and squeeze as much liquid of it as you can in a rag or paper towel. shred the sweet potato and add them both in a mixing bowl. mix in the almond flour, garlic powder, oregano, salt and pepper. add in the egg and mix until batter forms.

  2. heat the avocado oil in a frying pan on medium heat. add the batter and flatten it out with a spatula. let it cook for about 5-6 minutes until it crisps up on the bottom. carefully flip and cook the other side of the pizza crust.

  3. layer on the marinara, spinach, shredded cheese, and pepperoni. cover the pan and let it cook until the cheese melts.

  4. serve with some red pepper flakes and enjoy!
