Edamame Pesto Toast

Gorgeously green edamame pesto completely dairy free and high in protein!

I’ve been obsessing over toasts lately. I also was always obsessed with pesto, so marrying the two I knew would be easy. I wanted to switch up the classic pesto recipe and try it out with edamame instead of pine nuts. It was SO delicious! It’s such a great way to use up some shelled edamame you have in your fridge.

I spread it on my toast and topped it with some lemon zest. I’ve also had it with a runny, jammy egg on top. Added some hot sauce and it was an amazing breakfast that was so quick and easy to make.

Here’s what you’ll need for this Edamame Pesto Toast:

  • toasted bread

  • edamame

  • avocado

  • basil

  • garlic

  • vegetable broth

  • sea salt

  • cracked black pepper

  • lemon juice

  • lemon zest

  • nutritional yeast

I love all the ingredients in this Edamame Pesto. Chances are you will probably have all you need for this in the fridge already. The avocado gives it some healthy fats and also make it so creamy. Using the avocado and the broth also makes this pesto oil free. It turns out way more creamy than it does oily like a lot of other pestos end up. The edamame flavor is subtle, but also gives it the nuttiness you would normally get from pine nuts. This is also totally dairy free because we are using nutritional yeast in place of parmesan.

 

Edamame Pesto Toast

(makes 8 servings)

ingredients:

  • slices of toasted bread - for serving

  • 1/2 cup shelled edamame

  • 1/2 avocado

  • 1 cup fresh basil

  • 1 garlic clove

  • 1/4 cup vegetable broth

  • pinch sea salt

  • pinch cracked black pepper

  • 1/2 lemon, juiced

  • 1 tsp lemon zest

  • 1 tsp nutritional yeast

directions:

  1. combine everything in a food processor except for the broth. once you blend the ingredients for a couple minutes, start to slowly add in the broth as you blend. scrape the sides as needed and blend again until pesto forms and is completely smooth.

  2. spread onto slices of toast and top with more lemon zest!
