Korean BBQ Chicken & Crispy Rice Bowl

This Gochujang Korean BBQ sauce makes for a sweet and spicy chicken over pan-fried crispy rice and roasted broccolini.

This is a sheet-pan meal the whole family is going to love. What I love doing is making a big batch of rice and keep it in the refrigerator, and when I want to use it, I put it in a pan with a little bit of water to revive it. For this dish, one the rice is revived, I add some oil to the pan and push it down real flat. I cook it untouched for a few minutes so get some crispiness to it, and its so delicious.

Gochujang is a sweet and spicy Korean BBQ sauce. It’s such a awesome alternative to original BBQ sauce we know and love. It has a bit more of a kick and is a little tangier. It’s perfectly paired with sesame seeds and some scallions to give a little Asian flair to this dish.

Korean BBQ Chicken & Crispy Rice Bowl

ingredients:

  • 2 chicken breasts

  • 1 cup soy sauce

  • 1 cup water

  • 1 tbsp minced garlic

  • 4 tbsp Gochujang BBQ Sauce

  • 1 cup jasmin rice

  • 1 tbsp olive oil

  • 1 bunch broccolini, trimmed

  • 1 tbsp olive oil

  • salt & pepper

  • 1 tsp garlic powder

  • 1 tsp ginger powder

  • toppings

    • sesame seeds

    • chopped scallions

directions:

  1. preheat oven to 425.

  2. make your jasmine rice according to package directions. set aside when done.

  3. slice your chicken breasts in half longways. place in an airtight container or plastic bag with the soy sauce, minced garlic, and water. let marinate for at least an hour.

  4. on a sheet pan lined with greased parchment paper, add the chicken breasts.

  5. in a bowl, toss the broccolini with 1 tbsp olive oil, salt, pepper, garlic powder, and ginger powder.

  6. arrange on the baking sheet around the chicken breasts.

  7. bake for 6 minutes.

  8. heat up the remaining oil in a pan and add in your cooked jasmine rice. press down to get it flat in the pan. let it cook untouched for a few minutes on medium high so the rice can crisp up. add this to your bowl on the bottom.

  9. remove the sheet from the oven, flip the chicken over, and brush on the gochujang bbq sauce over each one. place back in the oven for another 7 minutes, depending on thickness.

  10. place the cooked chicken and broccolini on top of the rice in your bowl. sprinkle on some sesame seeds and chopped scallions to serve!
