Maple Sriracha Cauliflower Bites

It’s feeling like fall time in North Carolina, and this means beer, wings, and football. These are some vegan “wings” when you need to switch it up for Sunday game days.
The maple sriracha combo makes these cauli bites so sweet with a big kick of heat. They aren’t made with any gluten, grains, dairy, or meat. These get so crispy using the air fryer so they’re a really healthy alternative to the classic fried wings.
The trick is to air fry them for half the time, coat them in your sauce, and then air fry them again. Toss with a little more sauce and these will be the crispiest, sauciest cauliflower bites you’ll ever have.
Maple Sriracha Cauliflower Bites
ingredients:
1/2 head cauliflower
1/2 cup cassava flour
1/4-1/2 cup water
1/2 lime, juiced
1/2 tsp salt
2 tbsp vegan butter or ghee
1/2 cup pure maple syrup
1 tbsp sriracha
1/2 lime, juiced
toppings:
sesame seeds
chopped scallions
directions:
cut the cauliflower into bite sizes.
mix together the cassava flour, 1/2 lime and salt in a bowl.
stir in the water slowly until the consistency of thin pancake batter is reached. you don’t want it too liquidy that it doesn’t stick to the cauliflower.
mix the cauliflower pieces into the batter and coat each one.
spray your air fryer basket and air fry at 400 for 10 minutes.
meanwhile, melt the vegan butter or ghee in a small saucepan.
once slightly browned, add in the maple syrup, sriracha and other 1/2 of a lime. whisk and cook on low until the sauce thickens (about 6-7 minutes).
take out the cauliflower, coat them with 3/4 of the sauce, and air fry again at 400 for 12 minutes.
drizzle the remainder of the sauce over top and add your toppings. I added sesame seeds and chopped scallions.
