General Tso Green Veggie Stir Fry

snap peas and french green beans sauteed with fresh ginger and garlic, with a make ahead general tso’s sauce you’re going to love for a quick weeknight meal. I love making stir fries for dinner, what’s better than throwing veggies into a wok and having dinner ready in minutes. what makes life even easier is having trader joe’s frozen bags of rice ready to go in your freezer. this whole dish literally takes 10 minutes from start to finish, so it’s perfect when you’ve been running around all day but need something inexpensive and fast.

usually when I make a stir fry, I use whatever vegetables I have on hand. this time I had a mess of green vegetables. I also love to use broccoli, carrots, edamame, bell peppers, you name it! you can also use any kind of starch you have in your pantry to serve it over. if I have a little more time on my hands, I’ll make soba noodles, brown rice, zucchini noodles, or cauliflower rice. you can also add whatever protein you want. I kept this dish vegetarian, but chicken, shrimp, or beef would be amazing in this bowl.

General Tso Green Veggie Stir Fry

ingredients:

  • 4 tbsp soy sauce

  • 1 tbsp hoison sauce

  • 1 tsp minced garlic

  • 1 tsp sesame oil

  • 1 tbsp rice vinegar

  • 2 tbsp honey

  • squeeze of sriracha

  • 1 tbsp arrowroot powder to thicken

  • 1/4 cup olive oil

  • 1 cup snap peas

  • 1 cup french green beans

  • 1/4 cup frozen peas

  • 1/2 large diced white onion

  • 1 tsp garlic powder

  • 1 tsp ginger

  • 1 cup your favorite rice (I used the classic white sticky rice for this)

directions:

  1. heat some olive oil in the pan and add in the snap peas, french green beans, frozen peas, and diced white onion.

  2. season with garlic powder and ginger and sauté on medium heat for 5 minutes. you want the veggies to remain crunchy.

  3. meanwhile, make your rice according to package.

  4. whisk together the rest of the ingredients, except the arrowroot powder. add the arrowroot in last and whisk again.

  5. pour the sauce over the veggies and cook for another couple minutes until the sauce thickens and coats everything.

  6. serve with sesame seeds and enjoy!
