I love making stir fries for dinner, what’s better than throwing veggies into a wok and having dinner ready in minutes. what makes life even easier is having trader joe’s frozen bags of rice ready to go in your freezer. this whole dish literally takes 10 minutes from start to finish, so it’s perfect when you’ve been running around all day but need something inexpensive and fast.
usually when I make a stir fry, I use whatever vegetables I have on hand. this time I had a mess of green vegetables. I also love to use broccoli, carrots, edamame, bell peppers, you name it! you can also use any kind of starch you have in your pantry to serve it over. if I have a little more time on my hands, I’ll make soba noodles, brown rice, zucchini noodles, or cauliflower rice. you can also add whatever protein you want. I kept this dish vegetarian, but chicken, shrimp, or beef would be amazing in this bowl.
