Roasted Lemony Green Beans With Toasted Almonds

If you have never roasted green beans before, immediately go turn on your oven and start making this recipe. These green beans get a punch of freshness with the lemon, as well as sweetness with the caramelized red onion. And you can’t forget the nuttiness of the toasted almonds.

It’s green bean season, and usually I love to slow cook my green beans in a pan with loads of olive oil and garlic. This time, I wanted to get them crispier and brighter, and this recipe did the trick. I was eating them right out of the oven they were so good.

Roasted Lemony Green Beans With Toasted Almonds

ingredients:

  • 2 cups fresh green beans

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 2 tsp honey

  • 3 garlic cloves

  • 1/2 sliced red onion

  • 1/4 cup sliced almonds

  • pinch salt and pepper

  • zest from 1 lemon

  • pinch of sesame seeds

directions:

  1. preheat oven to 390.

  2. trim the ends of your green beans. combine the green beans, sliced red onion, whole garlic cloves, and almonds in a bowl.

  3. toss them with the olive oil, lemon juice, honey, salt and pepper.

  4. roast for 12-15 minutes, stirring them halfway.

  5. remove the garlic cloves, top with the lemon zest and sesame seeds and serve!
