Gluten Free Dino Nuggets

What’s the one thing you begged your mom to make you every day after school (and even crave them as adults now)? My answer will always be dino nuggets!!!

These are baked in the oven to get crispy and delicious and you can make them into any shape you want, which is so fun to make with the kiddos. I of COURSE had to do dinosaurs, but you can use any cookie cutter you have. I also made some of them into classic round chicken nugget shapes, which doesn’t require you to use any cookie cutter at all.

Gluten Free Dino Nuggets

ingredients:

  • 16 oz ground chicken

  • 2 cups gluten free panko breadcrumbs

  • 2 eggs + 3 eggs

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • salt & pepper

  • olive oil spray

  • your favorite dipping sauces!

directions:

  1. in a bowl, combine the ground chicken, 2 eggs, garlic powder, onion powder, 1 tbsp salt and some pepper. mix it all together until fully combined.

  2. line a baking sheet with parchment paper, spray it down, and form your nugget shapes. spoon some of the chicken mixture onto the baking sheet and flatten it out slightly so it is of even thickness. cut out the shape and remove the chicken mixture around the cookie cutter. pull off the cookie cutter (might need to use a fork to push the chicken mixture down through it if it’s sticking). repeat until you use all your shapes. if you are doing a classic nugget shape, roll a spoonful into a ball and flatten it out slightly onto the baking sheet.

  3. freeze the nuggets for 1-2 hours until firm.

  4. when you are ready to bake them, preheat the oven at 400 F.

  5. mix the 3 eggs with some salt in one shallow bowl, and pour the gluten free panko into another shallow bowl. dredge each nugget in the egg, and then into the breadcrumbs. place on a baking sheet that is sprayed down and repeat until all nuggets are done.

  6. lightly spray the tops of the nuggets with olive oil spray. bake them for 30 minutes, flipping halfway through.

  7. let them cool and serve with your favorite dipping sauces!
