Kimchi Fried Rice

A fried rice bowl made it just 15 minutes loaded with kimchi, onions, bell peppers, spinach, sesame, eggs, and of course sriracha!

Kimchi fried rice is one of my favorite dishes to make if I need to make dinner with almost no time to spare. It requires only chopping up veggies and frying it all up in one pan. I love adding kimchi to fried rice to give it a richer flavor. You can add meat to this dish if you want, but I usually end up not needing it since it is packed with veggies and eggs!

Kimchi Fried Rice

(serves 1)

ingredients:

  • 1 tbsp olive oil

  • 1 cup cooked rice

  • 2 eggs, scrambled

  • salt + pepper

  • 1 tsp minced garlic

  • 1 tsp ginger paste

  • 1/2 red bell pepper, chopped

  • 1/2 yellow or white onion, chopped

  • 1 handful spinach

  • 1/2 cup kimchi

  • 1 tsp sesame oil

  • 1 tbsp sesame seeds

  • pinch of furikake seasoning (sesame seeds + nori)

  • 1 tbsp soy sauce

  • sriracha to taste

  • chopped green onion

directions:

  1. in a frying pan, scramble your eggs and season with salt + pepper. set aside when cooked.

  2. add the olive oil to the pan and fry the garlic and ginger until fragrant. add in the onion and bell pepper and cook until softened.

  3. strain the juice of the kimchi out into a bowl and save. add the kimchi to the pan and fry for a few minutes.

  4. add in the cooked rice, liquid from the kimchi, soy sauce, sesame oil, sesame seeds and furikake seasoning.

  5. after another couple minutes, add in the spinach and the eggs back into the pan. cook until the spinach is wilted.

  6. top with sriracha, more sesame seeds, furikake and green onion.
