Creamy Tuscan Tortellini Soup

It’s getting to be that time of year again! Soups after a long chilly day.. there’s seriously nothing better. This hardy dish is filled with cheese tortellini, Italian sausage, cherry tomatoes & spinach…so comforting and cozy!

You guys asked for it, so here I am with another recipe adding to my longgggg list of soups! Who can blame you though, it is in fact soup season… This creamy tuscan inspired soup is filled with all the goodness, ready to warm you up on a chilly fall day. & it only takes about 20 minutes on the stove, so let’s also go ahead and add this to easy weeknight dinner ideas as well. This is a great dish for weeknights because it has your protein, carbs, and veggies all in one… however if you are looking for some sides go ahead and scroll down, I got you!!

Here are the Ingredients for this Creamy Tuscan Tortellini Soup:

  • Produce - Spinach, Cherry Tomatoes, Yellow Onion

  • Seasonings - Salt, Pepper, Red Pepper Flakes

  • Pantry - Tortellini, Croutons, Olive Oil, Chicken Broth, Crushed Tomatoes, Diced Tomatoes

  • Dairy - Parmesan, Half & Half

  • Protein - Mild Italian Sausage

Creamy Tuscan Tortellini Soup

The most comforting meal for a chilly fall day! Cheers to soup season!!!

Ingredients

  • 1/2 lb mild Italian sausage
  • 1/2 cup yellow onion, diced
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 3 cups chicken broth
  • 28 oz crushed tomatoes
  • 14.5 oz can diced tomatoes
  • 3 cups spinach
  • 1 tsp salt
  • 1/2 tsp pepper
  • 10 oz tortellini
  • 1 cup half and half
  • Pinch red pepper flakes
  • Fresh parmesan

Instructions

  1. Heat the olive oil in a Dutch oven or soup pot. Brown the sausage and crumble it up. Once cooked, remove from pot and set aside.
  2. Add the onions into the pot and cook in the grease from the sausage. Season with salt and pepper sauté a couple minutes. Add the cherry tomatoes and cook another 5 minutes.
  3. Add the crushed tomatoes, diced tomatoes, chicken broth, and half of the half & half. Once simmering, add in the tortellini, spinach and the sausage back in. Simmer until the tortellini is cooked, about 5- 7 minutes.
  4. Stir in the rest of the half & half. Serve with red pepper flakes and parmesan.
