Banh Mi Turkey Burgers

Banh Mi in burger form. These are packed with spice and tons of flavor + are surprisingly so simple!

After grilling out all summer, I was looking for a way to upgrade the classic burger & that’s exactly what this recipe is. These burgers are so fresh but also pack a really nice punch. I used ground turkey to make mine, but you can use beef or chicken too!

Here’s what you’ll need to make these Banh Mi-inspired burgers:

  • Vegetables - Green Onions, Carrots, Persian Cucumber, Garlic, Jalapeno

  • Seasonings - Salt

  • Pantry - Brioche Buns, Fish Sauce, Soy Sauce, Sriracha, Kewpie Mayo, Sugar, White Vinegar

  • Protein - Ground Turkey

  • Herbs - Cilantro

Banh Mi Turkey Burgers

These turkey burgers are packed with so much flavor and made in the air fryer for minimal clean up and quick cooking. It literally can’t get easier!

Ingredients

Burgers
  • 1 lb ground turkey
  • ½ cup green onions, chopped
  • 1 tbsp fish sauce
  • 2 tbsp soy sauce
  • ½ tbsp garlic, minced
  • 1 tbsp sugar
  • ½ - 1 tbsp sriracha (depending on spiciness)
  • Cilantro
  • 4 brioche buns
Pickled Veggies
  • 1 cup matchstick carrots or carrots sliced
  • 1 cup Persian cucumbers, sliced into matchsticks
  • 1 jalapeno, sliced (seeds removed if you want less spicy)
  • 1 cup white vinegar
  • 1 cup water
  • ½ tsp salt
  • ½ tsp sugar
Spicy Mayo
  • Kewpie mayo
  • Sriracha

Instructions

  1. Preheat air fryer at 360 F. for 5 minutes.
  2. Mix the ground turkey, green onions, fish sauce, soy sauce, garlic, sugar, and sriracha together. Divide into 4 equal patties.
  3. Air fry at 360 F for 10-13 minutes, flipping halfway, until the internal temperature is 165 F.
  4. To make the pickled veggies, heat the vinegar, water, salt and sugar in a sauce pan until it starts to simmer. Place the veggies in a large bowl or jar and pour the pickling liquid over top. Let cool to room temp and store in fridge until ready to use.
  5. Make the spicy mayo by mixing the kewpie mayo and sriracha together.
  6. Assemble the burgers on the brioche buns with the pickled veggies, a handful of cilantro, and the spicy mayo. Enjoy!
