I’m always one for a simple meal that nourishing but comforting. It’s kind of my bread-and-butter I would say! But now that I have a baby and am postpartum, I would say it’s even more important to me now more than ever. And what is really topping it all is convenience. Having a nourishing and comforting meal that is convenient for me to make in under 30 minutes is absolutely crucial, especially now that I’m lucky to even have 30 minutes to make dinner!
This Air Fryer Pizza Chicken is exactly this type of recipe. It takes 20 minutes to make, is high in protein, and is so warm and comforting. I make it in the Cosori TurboBlaze Air Fryer so it takes so much less time to cook, and less overall cleanup which you got to love. It couldn’t be easier if I tried!

Ingredients
- 2 chicken breasts
- 1 cup marinara sauce
- 1 ball fresh mozzarella
- Pepperoni slices
- Fresh Basil
- 1/4 tsp garlic powder
- 1/4 tsp oregano
- 1/4 tsp onion powder
- pinch red pepper flakes
- pinch of salt
- pinch of black pepper
- 2 tbsp olive oil
Instructions
- Preheat the air fryer at 400 F for 5 minutes.
- Slice through the center of the chicken breasts longways, but make sure to not slice completely through the chicken to cut it in half. You want it to butter open.
- Season the chicken all over with the olive oil and spices. Open the chicken and spread some marinara inside. Layer the mozzarella and pepperoni slices inside and then close the chicken back up. You shouldn't need a toothpick to keep these together.
- Place the chicken in the air fryer basket. If using the Cosori Smart Meat Thermometer, place it through the middle of the chicken. Cook at 400 F for 13 minutes or until internal temperature is just under completely cooked (165 F is perfect for chicken).
- Remove the thermometer and add more marinara and mozzarella on top each chicken breast. Cook for another 3-5 minutes, just for the cheese to fully melt.
- Serve chicken with fresh basil on top and enjoy!
