Sriracha Mac & Cheese

pasta / grain free

here’s a twist on everyone’s favorite comfort food, mac & cheese. this uses some asian flavors of sriracha and sesame to bring the flavors to a whole new level.

this recipe is also grain free. my favorite grain free pasta to use is banza, so for this recipe I had to go with the elbows for that classic mac & cheese taste. I also used bob’s red mill almond flour in place of regular all purpose flour for a gluten free version. you can use regular pasta and flour for this recipe if you don’t care about making it grain free also. you can also make it dairy free and vegan if you sub for plant-based milk and cheese.

Sriracha Mac & Cheese

ingredients:

  • 8 oz your favorite grain free pasta (I use banza elbow noodles)

  • 2 tbsp butter

  • 1 tbsp almond flour

  • 1 cup of milk

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1/2 cup of parmesan

  • 2 tbsp sriracha

  • 1 tbsp of toasted sesame seeds

  • chopped scallions

directions:

  1. make your pasta according to package and meanwhile, make the cheese sauce.

  2. add the butter to a pan on medium low and let it brown.

  3. sprinkle in the flour and mix into the butter to form a paste. let it cook down for a couple minutes.

  4. and in the milk, salt, pepper and garlic powder and bring it to a simmer and thicken.

  5. stir in the cheese and sriracha. you can add more sriracha to your liking.

  6. toss the cooked pasta noodles into the pan of cheese sauce.

  7. serve and top with toasted sesame seeds and green onions.
