Lately, I’ve been incorporating lots of protein into my diet. I’ve been trying to cut down on carbs also. I will have my healthy carbs in the morning, aka oatmeal or ezekial english muffins, but besides my breakfast, I’ve been staying away from them. Eliminating carbs as well as dairy and introducing more portioned out protein pairs with clean and nutrient rich veggies and fruit has made me feel 1000% better. I’m fitting into my clothes better, have more energy, and am just more mindful about what I’m putting into my body.

I’ve loved incorporating oatmeal into my breakfasts, but as all things do, it gets old eating the same way over and over. These Baked Oatmeal Bars did the trick with having something healthy that i love eating, just changing it up a little! It’s also great because you can batch these and make them for the week. They’re a great thing to grab and run out the door since they’re hand-held also.

I’m a BIG berry girl. Berry and fruit flavored desserts and baked goods have always been my favorite. I added strawberries, blueberries and even strawberry jam to these bakes oats. You can add any mix ins you like though. Nuts or chocolate chips would be excellent. Have fun with it!

 

Baked Oatmeal Bars

makes 9 bars

ingredients:

  • 2 cups rolled oats

  • 2 bananas, mashed

  • 1/2 cup dairy free milk (I love using nutpods cinnamon swirl)

  • 1/2 tsp salt

  • 2 tbsp stevia, monkfruit sweetener or honey

  • 1 tsp vanilla extract

  • your favorite add-ins (I used strawberries, blueberries & strawberry jam)

directions:

  1. Preheat the oven to 350 F. Line an 8-inch pan with parchment, or grease well.

  2. Stir together all ingredients, then smooth into the pan.

  3. Bake for 25-30 minutes.

  4. Slice into bars. Serve or store in refridgerater for 3-4 days.
