Honey Bunches of Strawberry Granola

This granola is like the best parts of Special K Red Berries combined with Honey Bunches of Oats!

My two favorite cereals growing up were hands down Special K Red Berries and Honey Bunches of Oats. I couldn’t ever even choose between the 2, so of course I begged my mom to get me both. It was my favorite treat to have after coming home from school.

I feel like this is an ongoing debate I’ve heard of recently but there was a poll I saw asking whether or not cereal for you was a breakfast item or a snack/ treat? For me, it was most definitely a snack. I loved my sugary cereals, so I treated them as treats or even as a dessert.

I wanted to make something healthier than packed the fiber, protein, and sweet flavors I loved so much. There is no refined sugar in this granola, but it get its sweetness from the honey and the dried strawberries.

You could eat this granola plain, with milk, on top of a smoothie or yogurt bowl, however you’d like! I love having nuts in mine, but you can absolutely leave them out if you have a nut allergy. Just add more oats or died fruit.

This granola is so simple to make. I mix everything together except for the strawberries and almonds. Once it’s baked, I toss the other two ingredients in and serve it up! I love to keep this stored in an airtight container to have on hand in my house when I want a sweet treat.

 

Honey Bunches of Strawberry Granola

(serves 4-6)

ingredients:

  • 3 cups rolled oats

  • 3/4 cup pecans

  • 1/2 cup pepitas

  • 1 tsp sea salt

  • 1/2 tsp cinnamon

  • 1 tsp vanilla

  • 1/3 cup olive oil or coconut oil

  • 1/2 cup honey

  • 1 cup dried strawberries

  • 1/2 cup sliced almonds

directions:

  1. Preheat oven to 350 F.

  2. Mix together all ingredients except the strawberries and sliced almonds.

  3. Spread the granola out onto a baking sheet and bae for 20-24 minutes, mixing it around halfway through.

  4. Remove from the oven and mix in the strawberries and almonds. Serve or store in an airtight container.
