A delicious and healthy air fryer appetizer. Think jalapeno poppers, meet meatballs, meet zucchini fritters.

Lately, I’ve been incorporating lots of protein into my diet. I’ve been trying to cut down on carbs also. I will have my healthy carbs in the morning, aka oatmeal or ezekial english muffins, but besides my breakfast, I’ve been staying away from them. Eliminating carbs as well as dairy and introducing more portioned out protein pairs with clean and nutrient rich veggies and fruit has made me feel 1000% better. I;m fitting into my clothes better, have more energy, and am just more mindful about what I’m putting into my body.

This has led me to essentially eating more whole 30 compliant meals. These Zucchini & Turkey Jalapeno Poppers are the perfect recipe to keep on hand when doing whole 30, eating paleo, or just want a delicious and easy appetizer or lunch! Here what you’ll need.

  • ground turkey

  • cilantro

  • jalapeno

  • cumin

  • garlic powder

  • onion powder

  • garlic

  • zucchini

  • pepper

  • salt

These Zucchini and Turkey Jalapeno Poppers take no time to make. you combine all the ingredients and mix them by hand. Roll our your nugget shape and pop them in the air fryer! It’s such an easy app to be able to have up your sleeve.

 

Zucchini & Turkey Jalapeno Poppers

makes 16 poppers

ingredients:

  • 8 oz ground turkey

  • 2 tbsp cilantro

  • 1 jalapeno, diced fine

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 clove garlic, minced

  • 1 zucchini, shredded

  • 1/2 tsp pepper

  • pinch of salt

directions:

  1. Mix together all the ingredients to form your mixture.

  2. With your hands, roll your poppers (you’ll get around 16).

  3. Air fry the poppers at 400 F for 4 minutes, flip them over, and air fry for another 4-5 minutes.

  4. Serve and dip into your favorite dipping sauces! (I love using dairy free ranch).
