“Feel Good Soup” With Ginger Chicken & Orzo

With this constant rain we are having in North Carolina, I need something warm and cozy snuggle up with after work. That’s where the “feel good soup” came to be.
It’s all made in one large pot, so very little cleanup. It’s filled with flavors like ginger, garlic, white pepper, lemon, and my favorite topping, the Trader Joe’s Chili Onion Crunch. This dish can be made vegan and meat-free by taking out the chicken. It will still be very filling with all the veggies and orzo in it.
“Feel Good Soup” With Ginger Chicken & Orzo
ingredients:
1 tbsp olive oil
1 yellow onion, diced
2 carrots, chopped
2 celery stalks, chopped
1 tbsp minced garlic
2 tbsp minced ginger
salt + pepper
1 tsp white pepper
1 tbsp chili onion crunch (or chili garlic sauce)
2 chicken breasts
3 cups chicken broth
1 1/2 cups water
1/2 cup orzo
1/8 cup soy sauce
half a lemon juiced
1 tbsp sriracha (optional)
toppings:
green onion
dill
cilantro
parsley
fresh ginger slices
squeeze of lemon
chili onion crunch
directions:
in Dutch oven, sauté yellow onion, carrots, celery, garlic, and ginger.
add in salt, white pepper, ginger powder, and chili onion crunch.
add in the chicken breasts and cover 2:1 chicken broth and water.
when water starts simmering, add in 1/2 cup of orzo and simmer for 10 minutes.
check chicken breast after 10 minutes for doneness. take chicken out, shred with a fork, and add back in.
stir in soy sauce, squeeze of lemon, and siracha. cook for another 5 minutes.
serve and top with green onion, dill, cilantro, parsley, fresh ginger, a squeeze of lemon, and a drizzle of the chili onion crunch
