Bell Pepper Air Fryer Nachos

meat free + grain free nachos using mini sweet bell peppers and fat free refried beans. best part, the only thing you’re using is the air fryer!

these cute little “nachos” are super easy and fun to make with the kiddos! they give you lots of protein using beans in place of ground beef or turkey, and are so flavorful you won’t even miss the nacho chips.

these bell pepper air fryer nachos take a total of 15 minutes to make - 5 minutes to assemble and 10 minutes to cook in the air fryer. they are also super customizable. you can definitely use meat in these if you want to sub the refried beans. you can also use any type of your favorite salsa and cheese, the combinations are endless!

Bell Pepper Air Fryer Nachos

ingredients:

  • mini bell pepper, halved and deseeded

  • 1/2 cup fat free refried beans

  • 2 tbsp taco sauce

  • dash of hot sauce

  • 1/4 cup of salsa (I use medium chunky salsa but use any of your favorite kind)

  • 1/2 cup shredded mexican blend cheese (again, you can use your favorite type of cheese here)

directions:

  1. mix the refried beans with taco sauce and hot sauce.

  2. scoop out a tbsp of the refried beans into each of the bell pepper halves.

  3. top each pepper with some of the salsa.

  4. air fryer at 400 for 8 minutes.

  5. take the air fryer basket out, add the cheese on top, and air fry for another 2 minutes until the cheese melts.

  6. let cool slightly and enjoy!
