Strawberry Fields Grilled Chicken Wrap

this strawberry fields grilled chicken wrap are filled with juicy grilled chicken, spinach & arugula, some fresh veggies, homemade balsamic dressing, and don’t forget the strawberries!

I literally cannot get enough of these summer strawberries, and this is another great way to use them for a delicious/ super quick lunch on the go! It has been so damn hot here in North Carolina so I am all for having a meal I don’t have to turn on an oven for.

it uses all really fresh ingredients, so its super light and refreshing. the filling would make for such a great salad, but sometimes a girl just needs a wrap.

Strawberry Fields Grilled Chicken Wrap

ingredients:

  • grilled chicken breast (I grilled a bunch after marinating the chicken in equal parts balsamic and water)

  • spinach

  • arugula

  • sliced strawberries

  • cherry tomatoes

  • sliced mini peppers

  • chopped walnuts

  • crumbled goat cheese

  • 2 tbsp balsamic

  • 2 tbsp olive oil

  • pinch of honey

  • pinch of salt

  • pinch of pepper

directions:

  1. add the spinach and arugula to the wrap first.

  2. then add in the chicken, strawberries, tomatoes, peppers, walnuts and goat cheese.

  3. make your dressing by whisking the balsamic, olive oil, honey, salt and pepper together and drizzle that over top.

  4. wrap it up, cut in half and enjoy!
