Gluten Free Blender Pancakes

A simple, healthy, and ready-in-minutes recipe for pancakes that will have you wanting to make these every morning!
Making pancakes on a Sunday morning is like watching that one extra episode of a Netflix show before bed - it just feels right! These pancakes are made in a blender so there is so little cleanup and they are ready to start baking so quickly. They are gluten free because we are using oats instead of flour. They are also naturally sweetened with ripened bananas instead of any sugar.
Pancakes are very much like pizza - they are so customizable and you can mix and match toppings as you please! I added peanut butter in my batter and mixed in chocolate chips. I love adding fruit on top the top with another drizzle of peanut butter. Here are some combos you could try:
(chunky monkey) peanut butter, diced bananas, chocolate chips
(pb&j) diced strawberries, almond butter
(blueberry muffin) blueberries, cinnamon, pecans
(berries & cream) strawberries, rasberries, blackberries, whipped cream
(banana bread) diced bananas, walnuts, cinnamon, nutmeg
Gluten Free Blender Pancakes
(makes 6 small pancakes)
ingredients:
1/3 cup coats
1 ripened banana
1 egg
1/4 tsp baking powder
pinch of salt
add ins
peanut butter
chocolate chips
berries
directions:
in a blender or food processor, add the oats, banana, egg, baking powder, and salt. blend for 30 seconds until it is all combined.
if you are adding in peanut butter, add it to the blender and blend again to incorporate.
fold in your other toppings (I added in chocolate chips).
heat a greased skillet and cook your pancakes until golden brown on each side.
serve with your favorite pancake toppings! mine are some strawberry slices, a drizzle of peanut butter, and some sugar free syrup.
