Melon & Heirloom Tomato Burrata Salad

The perfect appetizer does not exi… Oh wait, I forgot burrata was a thing.
Getting on the burrata train is the easiest thing to do because of how versatile it really is! This is a super simple appetizer/ salad that is so fresh, sweet and tangy. If you can eat meat, I would recommend frying up some prosciutto and tossing that in with it. You can also add in some toasted croutons that would be heavenly in this dish. I used tuscan melon in this recipe, but honeydew or cantaloupe also work great.
Melon & Heirloom Tomato Burrata Salad
ingredients:
1 cups melon (tuscan melon or cantaloupe are great)
1 large heirloom tomato
2 cups arugula
2 tbsp olive oil
1 ball burrata
1 tbsp flaky sea salt
1 tsp cracked black pepper
1 handful fresh basil
2 tbsp balsamic glaze
directions:
assemble the arugula on the bottom of the plate.
next, chop up your melon and ripe tomato and scatter across the plate.
place the burrata in the middle.
drizzle the olive oil and balsamic glaze over top everything. season with flaky sea salt and cracked black pepper.
scatter some fresh basil leaves over the dish.
break open the burrata and enjoy!
