Delicious, lemony Chicken Piccata but gluten and dairy free!
I love a quick and easy chicken dish. Chicken Piccata is a great one when you’re crunched on time and ingredients! It’s minimal work so I love incorporating it into my weekly meal plan. It’s crazy how healthy it actually is, because usually when I think of saucy chicken, I think it’s loaded with butter, cream and fat. This one though is only made with olive oil, white wine, lemon and chicken broth! So it’s both rally saucey and really light.

Pantry - Olive Oil, Gluten Free Flour, Capers, White Wine, Chicken Broth

Healthier Chicken Piccata
Ingredients
- 1 large chicken breast
- 1/4 cup olive oil
- 1/2 cup gluten-free flour (can also use all-purpose)
- 1/2 tsp + 1/4 tsp salt
- 1/2 tsp pepper
- 2 garlic cloves, minced
- 2 tbsp capers with the juice
- 1/2 lemon, juiced
- 1/4 cup dry white wine
- 1/2 cup chicken broth
- lemon slices
- parsley for garnish
Instructions
- Slice the chicken breast long ways. Lay a piece of parchment paper over top each piece and pound to get them 1/4" thin. Season each side with 1/2 tsp salt and pepper.
- Pour the flour in a shallow bowl and dredge the chicken in it on each side.
- Heat half the olive oil in a large pan on medium high heat and sear the chicken on both sides. It should be about 2-3 minutes on each side so it gets golden brown. Remove the chicken and set aside.
- Lower the heat to medium low and add the rest of the olive oil. Then add the garlic and capers and saute for 1 minutes. Pour in the white wine and let cook down for 3 minutes. Then whisk in the lemon juice, chicken broth, and 1/4 tsp. Bring it to a simmer, add in some of the lemon slices and cook for 5 minutes.
- Add the chicken back into the pan and add more lemon slices over top. Cover and cook for 3-4 more minutes.
- Spoon the sauce overtop the chicken and serve with chopped parsley.
Notes
To Make it Whole 30/ Paleo: Don't add the white wine and add in more chicken broth instead
