425 425 Roast Chicken With Garlic & Cherry Tomatoes

425 425 chicken is my GO - TO recipe for a quick and healthy weeknight meal. The name comes from the directions on how to cook it. You roast the thighs at 425 F for 25 minutes (425 4-25, get it?) I paired this roast chicken with sweet, jammy cherry tomatoes, garlic and shallots with a squeeze of fresh lemon & parsley.

There’s nothing easier than have a one-pan dish on a weeknight for a quick & healthy dinner. I marinated the chicken thighs overnight so I could throw them all in a pan to roast them the next night. The cooking time is under 30 minutes so it also makes for the perfect dinner party dish, so you can hang out with your friends as this cooks in the oven. The chicken skin is so crispy on top, and the rest of the ingredients are literally thrown around the chicken to finish off cooking. In the words of Ina, how easy is that?!

425 425 Roast Chicken With Garlic & Cherry Tomatoes

ingredients:

  • 6-8 chicken thighs, bone in, skin on

  • 1/2 cup balsamic vinegar

  • 1/4 cup apple cider vinegar

  • 1 cup water

  • 1/4 cup olive oil

  • 1 cup cherry tomatoes

  • handful whole garlic cloves

  • 1-2 shallots, sliced

  • 1 lemon

  • salt & pepper

  • fresh parsley, chopped

directions:

  1. marinate the chicken with the vinegars, water and some salt and pepper in an air-tight container for at least 30 minutes. I like to do it the night before or the morning of when I am going to make it so the chicken can soak up a lot of moisture and stay juicy when cooking.

  2. preheat the oven at 425 F.

  3. place your chicken thighs around a large pan or on a baking sheet.

  4. scatter the cherry tomatoes, sliced shallots, and garlic around the chicken on the pan.

  5. drizzle the olive oil over everything and give it a sprinkle of salt and pepper.

  6. roast the chicken for 25 minutes. check for doneness.

  7. squeeze some lemon over top the dish with some fresh chopped parsley!
