These Cacio e Pepe Wings take everything I love about the classic Roman pasta and turn it into the kind of snack that belongs on a game day spread. The wings get super crispy before being tossed in warm butter bloomed with plenty of freshly cracked black pepper, then showered with finely grated Pecorino Romano while they’re still hot. You get that salty, peppery, cheesy flavor in every bite without losing the crunch of the wings.
And because there is truly no such thing as too much cheese, I like to finish them with even more Pecorino and black pepper right before serving. They’re simple enough to throw together for a football Sunday but feel a little more special than your standard wing situation, which is basically the entire point of Game Day for the Girls.

Cacio e Pepe Wings
Extra crispy chicken wings tossed in buttery Pecorino Romano and loads of freshly cracked black pepper for the ultimate cacio e pepe-inspired game day bite!
Ingredients
- 1 lb wings
- 3 tbsp baking powder
- 1 tsp garlic powder
- 1 tsp cracked black pepper
- 1/2 tsp salt
- 1 stick butter
- 2 tbsp freshly cracked black pepper
- 1 cup finely grated pecorino romano
- 1 cup finely grated parmesan
- 1/4 cup hot water, plus more as needed
Instructions
- Pat the wings dry with paper towels and stick the wings in the freezer for 10-15 minutes. Meanwhile, combine the baking powder and seasonings listed. Remove the wings from the freezer, pat dry once more, and coat in the baking powder mixture.
- Arrange the wings on a wire rack over a baking sheet. Bake at 450 F for 30 minutes, flipping halfway, broil for 3-4 minutes.
- Melt the butter in a saucepan and add the cracked black pepper. Cook for 1-2 minutes to bloom. Add up to 1/4 cup of hot water and whisk.
- Toss the crispy wings in the hot butter and add the grated cheese. Toss well until everything is emulsified. Then top with more parmesan and cracked black pepper. Enjoy!
