Broccoli Cheddar Hashbrown Waffles with Poached Eggs

A crispy, cheesy, veggie-filled hashbrown that is browned to perfection in a waffle maker and topped with a runny poached egg? Sign me up!

These hashbrowns are the ultimate kid-friendly breakfast item (and that’s not only because I made these in a Mickey Mouse waffle iron!) They are only 4 ingredients and are ready in a pinch. You use two peeled and shredded russet potatoes, 1 cup steamed chopped broccoli, 1/2 cup shredded cheddar cheese, and 2 eggs to bind it all together. Once you add in your seasonings, that is it! You are ready to start making your waffles.

These hashbrown waffles only cook for a few minutes and they get so crispy and ooey gooey with the melty cheddar cheese. All that’s left to do if make your runny eggs to put on top. I loved doing poached on these because they are the runniest, but a fried egg works just as great.

Broccoli Cheddar Hashbrown Waffles with Poached Eggs

(makes 3 large Mickey Mouse Waffles (lol) but I would say it would make 4-5 large normal shaped waffles)

ingredients:

  • 2 russet potatoes, peeled and shredded

  • 1 cup broccoli, steamed

  • 1/2 cup shredded cheddar cheese

  • 2 large eggs

  • garlic powder

  • onion powder

  • salt & pepper

  • extra eggs to make your poached eggs

directions:

  1. warm up the waffle iron and spray it with nonstick spray.

  2. gather the shredded russet potato into a paper towel or cheese cloth and squeeze out the excess water.

  3. return the potatoes to a bowl and mix with the chopped steamed broccoli and cheddar cheese. mix the eggs into the bowl and add in the seasonings.

  4. spoon the batter into the waffle maker and cook until golden brown.

  5. add your poached or fried eggs on top!
