Mini Smoked Salmon Bites on Sweet Potato Toasts
ingredients:
I large sweet potato
1/2 cup cream cheese at room temperature
2-3 slices of smoked salmon
pickled red onions
2 tbsp capers
2 tbsp olive oil
2 tbsp everything but the bagel seasoning
fresh dill
directions:
wash your sweet potato and cut into 1/8” thick rounds.
spray them with oil air fry at 400 for 15 minutes, flipping halfway. you can also bake them instead at 400 for 30 minutes until crispy.
meanwhile, make your fried capers. heat the olive oil in a pan and once hot, add in the capers. fry for 5 minutes and set aside.
let the sweet potatoes cool slightly.
spread on the cream cheese.
layer on your smoked salmon, then your pickled onion, capers, EBTB seasoning, and top with the fresh dill.
