Bang Bang Cauliflower Tacos

Move over Bang Bang Shrimp! These Bang Bang Cauliflower tacos are made in the air fryer and paired with a carrot and cucumber ribbon slaw.
I love a quick & easy taco recipe. Especially ones that are not your typical beef, cheese and lettuce tacos. One of my favorite restaurants in North Carolina is White Duck Taco. There is one in Asheville where, fun fact, my husband and I actually ate at together on a school field trip and where he said he “started falling for me”. Can’t blame him though.
But anywayyyyy, at White Duck Taco they have all different weird type of tacos, which are my absolute favorite. That was the first time I had different types of tacos, but the Asian ones really caught my eye. This is one I would definitely add to their menu. Bang Bang Shrimp is one of my go-tos, but I wanted to make this one vegetarian! I love air frying cauliflower in a batter of cassava flour and water to get them extra extra crispy. It makes for the perfect base for these tacos.

Vegetables - Cauliflower, Rainbow Carrots, Cucumbers, Green Onions, Lime
Seasonings - Salt, Pepper
Pantry - Flour, Kewpie Mayo, Sriracha, Thai Sweet Chili Sauce, Rice Vinegar, Sesame Oil, Sesame Seeds, Corn Tortillas

Bang Bang Cauliflower Tacos
Ingredients
- 1 head of cauliflower, cut into florets
- 1 cup cassava flour, gluten free flour, or all-purpose flour
- 3/4-1 cup water
- 1/2 lime, juiced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup kewpie mayo or vegan mayo
- 1/4 cup Thai sweet chili sauce
- 1 tbsp sriracha
- 3 carrots, shaved or cut into ribbons
- 1 Persian cucumber, shaved or cut into ribbons
- 2 tbsp rice vinegar
- 1 tsp sesame oil
- green onions for toppings
- sesame seeds for topping
Instructions
- Whisk together the flour, water, lime and salt. Toss the cauliflower florets in the batter so they are completely coated. Place in in the air fryer (making sure not to overcrowd). Air fry at 400 F for 10 minutes, flipping halfway.
- To make the Bang Bang Sauce, combine the mayo, Thai sweet chili sauce and sriracha. Once the cauliflower is cooked, coat in the bang bang sauce.
- To make the Slaw, mix the carrot and cucumber ribbons with rice vinegar, pepper, and sesame oil.
- To assemble, add the slaw onto the corn tortillas, then the cauliflower, and top with green onion, sesame seeds and more sriracha.
Notes
Vegan: Use vegan mayo instead of kewpie mayo.
