Bacon & Brussel Sprouts Pizza With Caramelized Onions

Is there really a better winter food combo than bacon with your brussel sprouts? The answer is absolutely not. And when these are combined on a pizza and topped with caramelized sweet onions? There is absolutely nothing better!

This will definitely be your new favorite cold weather pizza topping. The wilted brussel sprouts are savory and salty with the bacon and gets a jolt of sweetness with the caramelized onion. I also use goat cheese and I think it pairs so nicely with these flavors. I arrange the cheese in dollops around the pizza so you get a charred, melty glob of a bite.

Here’s what you’ll need to make this bacon & brussel sprout pizza:

  • bacon

  • brussel sprouts

  • sweet onion

  • goat cheese

  • walnuts

  • red pepper flakes

  • olive oil

  • sage

  • pizza crust

  • salt + pepper

The pizza crust I use was already pre baked, so all I had to do was a few simple steps and I was eating this delicious meal in under 20 minutes. I cooked the bacon, saved the bacon fat and then caramelized my onions in it. I layered on olive oil, brussel sprouts, the bacon, crumbled goat cheese, crushed walnuts, salt and pepper. I baked the pizza and then added my caramelized onion on top and that was it! So so easy.

 

Bacon & Brussel Sprouts Pizza With Caramelized Onions

ingredients:

  • 1 pizza crust, pre-made

  • 1 cup brussel sprouts, shredded

  • 3 pieces bacon, chopped

  • 1 sweet onion

  • 4 oz goat cheese

  • 1/4 cup olive oil

  • 1/4 cup walnuts, chopped fine

  • 1 tsp sage

  • pinch red pepper flakes

  • salt + pepper

directions:

  1. cook the bacon until it just starts to get crispy. set aside on paper towel to soak up some grease. don’t throw out the grease in the pan!

  2. slice your onions thin and cook them in the bacon fat on low heat and season with salt and pepper.

  3. drizzle half the olive oil over the pizza crust. then add the shredded brussels sprouts, and drizzle the other half of the olive oil over those. season with salt and pepper.

  4. crumble the goat cheese and add that scattered around the pizza. then add the bacon bits and some red pepper flakes.

  5. cook pizza for half the time. meanwhile, chop your walnuts up fine and mi them with some sage. take the pizza out and sprinkle the walnut mixture over top. put back in the oven and cook for the remaining time.

  6. ad the caramelized onions on top and enjoy!
