Zucchini Cauliflower Gnocchi

last year, cauliflower gnocchi were ALL the craze. I still always make sure to have at least one bag of these in my freezer when I’m in need of a simple and really quick dinner. when you mix one bag of these gnocchi with some veggies, it makes enough for 2 servings, which is perfect for my family. zucchini is my favorite summer veggie and make this gnocchi dish so sweet and fresh.

this is a vegetarian recipe and can be vegan and dairy free if you use vegan butter and parmesan. if you’re looking to bulk this dish up and add meat, chicken or sweet italian sausage would be a great addition.

Zucchini Cauliflower Gnocchi

ingredients:

1 bag of trader joe’s cauliflower gnocchi

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 1 clove of minced garlic

  • 1-2 zucchini sliced

  • 1/4 cup of dry white wine

  • 2 tbsp cracked black pepper

  • 1 tsp salt

  • 1/4 cup parmesan + more for serving

directions:

  1. add olive oil and garlic to your pan on medium low and sauté until fragrant.

  2. add in the butter and let it melt and brown.

  3. toss in the zucchini and cook for 10 minutes until it gets soft.

  4. add in the white wine and let it cook down.

  5. add your bag of cauliflower gnocchi to the air fryer for 13 minutes at 390. shake halfway through.

  6. meanwhile, add in the cracked black pepper and stir in.

  7. add your cooked cauliflower gnocchi to the pan and add in the parmesan.

  8. serve with some more parmesan (always).
