White Cheddar Mac & Cheese

An easy White Cheddar Mac & Cheese your about to become as obsessed with as I am.
Is there really anything better than saucy, white cheddar mac and cheese? It’s the ultimate dish, whether it’s an entre or a side. I love making this mac for big parties in the summer.
For father’s day the other day, I made this white cheddar mac and cheese and it was a massive hit! Since I made it a few hours before the party, I put it in a large baking dish, added some cubed cheese on top, and covered it with tin foil. When I was ready to bake, I simply poured 1/2 cup of half and half over top and baked it until it was warm and melty again.
Here’s what you need to make this White Cheddar Mac & Cheese:
rigatoni
butter
tbsp flour
half & half
paprika
salt
black pepper
colby jack
white cheddar
corn starch
I LOVE a saucy pasta. Big noodles are my favorite so I’m obsessed with using rigatoni for my mac and cheese. It’s great because there’s so much surface area to soak up and my sauce. The sauce has more to coat, so I love making a little more sauce than usual for this.
White Cheddar Mac & Cheese
ingredients:
1 lb rigatoni
3 tbsp butter
1 1/2 tbsp flour
1 1/2 cups half & half
1 tbsp paprika
1 tsp salt
1 tsp black pepper
1 cup colby jack, shredded
1 cup white cheddar, shredded
2 tbsp corn starch
directions:
Cook rigatoni according to package directions.
In a large saucepan, heat the butter on low. Once slightly browned, whisk in the flour. Cook down for a couple minutes.
Slowly add in the half and half while whisking, 1/2 a cup at a time. Mix in the salt, pepper and paprika.
Mix the shredded cheese with the cornstarch and then add into the sauce.
Pour the sauce over your cooked rigatoni and mix (It’ll be saucy!) Stir and serve!
