10 Minute Pasta Al Limone

Pasta al Limone is a simple summer pasta that’s creamy, bright and deliciously lemony. this super authentic italian dish is made with so few ingredients but is so unbelievably fresh.
it’s made with all the favorite tastes, fat, acid, and salt. butter or olive oil, garlic, lemon, cheese, and cream. this is like a mac and cheese but 1000x better IMO. you can also make this recipe completely without cream! just add more pasta water to get the cheese to the stick to the pasta.
10 Minute Pasta Al Limone
ingredients:
1/2 lb rigatoni or penne
4 tbsp butter
1 tsp minced garlic
1 tsp lemon zest
3/4 cup half and half or heavy cream
1 tsp salt
1 tsp black pepper
1/4 cup reserved pasta water
squeeze of lemon
3/4 cup parmesan cheese
directions:
boil salted water and cook pasta until al dente.
in a large saucepan, heat the butter on medium low until it is melted and slightly browned.
add in the minced garlic and lemon zest and cook until fragrant.
stir in 3/4 cup of the half and half or heavy cream and season with salt and pepper.
lower heat and let it simmer until the sauce begins to thicken.
add in the pasta water and let sauce thicken again.
add your al dente pasta to the pan and toss in the suace.
stir in the parmesan a little at a time, stirring the pasta.
add in the squeeze of lemon, stir and serve.
top with more parmesan, duh.
