Tzatziki Tortellini Pasta Salad

This pasta salad is an ultimate summer favorite because it’s so light, fresh, creamy & packed with flavor all at once! P.S. the longer you let it marinate in the fridge, the better it gets - perfect for a busy summer day!

This is the most perfect summer pasta dish for a few reasons: it’s so bright and fresh from the herbs and the lemon, it’s filling enough to be the main course in your summer dinner, its refreshing since it’s chilled, & it’s so quick and easy to make. To make this vegetarian, use a cheese tortellini - it’s just as good!

Tzatziki Tortellini Pasta Salad

A fresh and creamy pasta salad perfect for a side dish or it can be the main star of the dinner. Here’s how to make it:

Ingredients

  • 1 lb sausage stuffed tortellini
  • 1 cup cucumbers, diced
  • 1 can artichokes, quartered
  • 1/2 red onion, diced
  • 3/4 cup Pearls Specialties Kalamata Olives, halved
  • 1/2 cup feta cheese
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 cup tzatziki
  • 2 tbsp red wine vinegar
  • 1/2 lemon, juiced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook the tortellini according to package directions. Let cool before assembling.
  2. In a large mixing bowl, add the cooled tortellini, Pearls Specialties Kalamata olives, cucumbers, artichokes, red onions, feta, dill and parsley.
  3. Toss the pasta with the lemon, red wine vinegar, tzatziki, salt and pepper until everything is combined. Serve immediately or store in an air-tight container for up to 3 days.
