Freezer Breakfast Sandwiches

Postpartum meal prep is here! And these freezer breakfast sandwiches are the perfect grab and reheat meal for busy mornings.

Meal prepping for when I’m post-partum has been one of the best things I could’ve done for myself. Having ready to heat up, high protein meals that I can grab easily is such an essential when you no longer have any time to think with a newborn baby! Now I know I’m getting so many nutrients for me and my baby and all I have to do is throw one of these sandwiches in the air fryer to heat up!

These are such a great option to make because they are totally customizable. I added spinach and roasted red peppers to my egg bake and then topped the sandwiches with colby jack cheese and Canadian bacon. You can use any sliced cheese you want on these, cheddar or pepper jack would’ve been great. I also have made these before using turkey sausage patties or bacon instead of Canadian bacon! Veggies can also be added to the egg bake depending on what you like. Mushrooms and onions would’ve been so amazing in these also.

  • Produce - Spinach

  • Protein - Eggs, Canadian Bacon

  • Seasonings - Salt, Pepper

  • Pantry - English Muffins, Roasted Red Peppers, Olive Oil

  • Dairy - Milk, Colby Jack Cheese

Freezer Breakfast Sandwiches

Delicious, customizable breakfast sandwiches that are packed with protein and can be stored in the freezer and heated up in the air fryer when ready to enjoy!

Ingredients

  • 6 english muffins
  • 8 eggs
  • 2 tbsp milk
  • Salt
  • Pepper
  • 2 cups spinach
  • 1 tbsp olive oil
  • ½ cup roasted red peppers, chopped
  • 6 slices Colby jack cheese
  • 6 slices Canadian bacon, cooked

Instructions

  1. Preheat oven to 300 F.
  2. Sauté the spinach with the olive oil for a couple minutes until wilted. Whisk the eggs, milk, salt, pepper, spinach, and roasted red peppers together. Add to a 9x13 greased baking sheet. Bake for 15 minutes until cooked through and center doesn’t jiggle. When cooled, cut the egg bake into 6 equal squares.
  3. Lay the English muffins cut in half on a baking sheet and toast in the oven slightly.
  4. On each English muffin, layer a piece of the egg bake, slice of cheese, and piece of Canadian bacon on. Wrap each in parchment paper and store in freezer gallon bag in the freezer until ready to use.
  5. To heat up, unwrap the sandwich and place in the air fryer. Air fry at 300 F for 7 minutes until sandwich is cooked through.
