Loaded Jacket Potatoes

British Tiktok has one me over with these crispy on the outside, fluffy on the inside jacket potatoes fully loaded with cheddar cheese, baked beans, and some added protein-packed Greek yogurt!
Pregnancy cravings are definitely not what I expected. I thought this whole time you’re craving weird food combinations like pickles and peanut butter when in reality, I crave food I already thought was amazing before I was pregnant, but the craving is just intensified. And let me tell you, when I first saw these loaded jacket potatoes pop up on my Tiktok, I had an intense craving for one let’s just say! So much so, I had to go out to get the ingredients to make it at home for myself.
These baked potatoes are made in the air fryer because they get super crispy on the outside with still staying really fluffy in the middle. I add in some extra protein by mashing the insides with some Greek yogurt and then using a little dollop on top also. These came out so amazing!

Loaded Jacket Potatoes
Ingredients
- 2 russet potatoes
- Olive oil
- Salt pepper
- ¼ cup nonfat, plain Greek yogurt (+ more for topping)
- 2 tbsp butter
- ½ cup shredded cheddar cheese
- 2 cups baked beans
- Red onions, diced
- Green onions, chopped
- Cilantro, chopped
Instructions
- Preheat the air fryer at 400 F for 3 minutes.
- Scrub the potatoes clean, pierce the potatoes a couple times with a fork, and coat the outsides with olive oil, salt and pepper. Place in the air fryer and air fry at 400 F for 50 minutes, flipping them halfway.
- Once the baked potatoes and cool enough to handle, slice the tops of the them longways and shortways to create a cross on top. Push the long ends in together to make a pocket in the middle of the potato. Mash the inside of the potato with salt, pepper, butter and 2 tbsp of the Greek yogurt.
- Top with the shredded cheese, warm baked beans, more Greek yogurt, red onions, green onions, and cilantro. Enjoy!
