Sundried Tomato Chimichurri

this chimichurri is zesty, sweet, a smidge spicy, and absolutely mouthwatering.

this sauce is totally vegan, grain free, dairy free, paleo, and whole 30 approved. it uses all whole and clean ingredients too. and unlike typical chimichurri, the sun dried tomato adds an amazing punch of flavor you normally wouldn’t get that just elevates it.

I’ve used this chimichurri over my beer can chicken before that you can find in this blog post. its so scrumptious on chicken or steak, but I also love to use this as a dip too.

Sundried Tomato Chimichurri

ingredients:

  • 1/4 cup olive oil

  • handful of cilantro

  • 1/2 jalapeno deseeded

  • 2 garlic cloves

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp apple cider vinegar

  • 1 tsp salt

  • 1 tsp pepper

  • pinch of red pepper flakes

  • 1/4 cup sundried tomatoes

  • optional: 1/4 cup water

directions:

  1. blend all the ingredients except for the water together for 2 minutes until a pesto-ey paste forms.

  2. add in a little water at a time. the amount depends on how thick or thin you want. you can make it thin and use it to drizzle on as a sauce. if you don’t add water, you can use it as a sort of pesto or even a dip. the choice is yours!
