Buffalo Bites Bowl with Crispy Potatoes & Shaved Brussels

sometimes I love getting back to basics, and this bowl delivers all the goods. protein, greens. and good carbs.

buffalo bites are one of my favorite things to order, so I decided to make them in the air fryer and a tad healthier by not using any breading with gluten. I eat these bites on their own, but I wanted to amp them up a little to make a whole dinner out of them. thus came the buffalo bites bowl.

this bowl is also really few ingredients, and you can make them all ahead of time and assemble right before you want to eat. you need chicken breast, arrowroot powder, whole 3o buffalo and ranch, brussel sprouts, and potatoes. besides olive oil and some seasonings, that is IT. it’s seriously that simple.

the buffalo flavor just seems to go with potatoes and brussel sprouts. I mean, I’ve literally ordered buffalo chips and buffalo brussel sprouts before while out to eat, so this flavor combo just made sense to me. I made both the chicken and the potatoes in the air fryer, but you definitely can bake them too if you’d want. the brussels are made in a pan and they get almost like sauted spinach, but have more crunch to them.

 

Buffalo Bites Bowl with Crispy Potatoes & Shaved Brussels

ingredients:

  • 1 chicken breast, cubed

  • 1/4 cup arrowroot powder

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp chili powder

  • 1 1/2 cups brussel sprouts

  • 2 russet potatoes

  • 1/4 cup whole 30 approved buffalo sauce (I used Noble Made Medium Buffalo Sauce)

  • 2 tbsp olive oil

  • 1 tsp mince garlic

  • pinch of salt

  • pinch of pepper

  • whole 30 approved ranch for drizzling and dipping

directions:

  1. wash and cut your potatoes into rounds and let them soak in water while you cook your chicken in the air fryer.

  2. add the diced chicken breast to a bowl and coat with salt, pepper, paprika, garlic powder, onion powder, and chili powder. toss and then ad in the arrowroot powder. toss the chicken again.

  3. cook the chicken in your air fryer at 360 for 9 minutes, shaking the basket halfway through.

  4. take the chicken out and toss in the buffalo sauce. add it back into the air fryer and cook for another 2-3 minutes.

  5. meanwhile, heat olive oil in a pan with minced garlic. slice your brussel sprouts thin and add them into the pan. cook on medium low, stirring them frequently as to not burn any. season with salt and pepper.

  6. once the chicken is done, drain the potatoes and pat dry. coat with a tiny bit of olive oil, salt and pepper, and add to the air fryer. cook at 400 for 14-15 minutes, shaking the basket a few times throughout cooking. keep an eye on them as not to burn.

  7. serve with the whole 30 ranch drizzle on top and enjoy!
